Eggs Italia


Ingredients
2 cups of zucchini (sliced)
1 dozen Gold Circle Farms eggs (beaten)
2 cups grated mozzarella cheese (low-fat or regular)
1 8-ounce jar marinara sauce
1 bunch fresh basil (chopped)

Instructions
Saute zucchini in cooking spray or 1 teaspoon olive oil for 4-5 minutes. Add eggs and cheese. Cook, stirring until eggs are almost cooked, add marinara sauce and basil, continuing to cook for one minute. Serve hot with garlic bread.
